winemaker's notes:
As a young wine, the Cabernet Sauvignon from d'Arenberg's High Trellis paddock has a dense crimson red colour with purple tinges.

The High Trellis has a typical young Cabernet Sauvignon attack on the nose; lifted mint and capsicum Cabernet edges above a rich, ripe blackberry, plum and liquorice base. Lighter typical cassis and blackcurrant aromas are also evident. A little smoky vanillin oak and cinnamon smells are usually present on top of brooding violet scented fruit and sweet cedar aromas.

On the tongue, mouth filling sweet blackberries, plums and blackcurrant flavours are highlighted by the rich, strong mid palate. Mulberry-like fruit continues from the mid palate balanced by finely structured and firm fruit and oak tannin on the typically long, fresh young tangy finish.

After time in bottle d'Arenberg's High Trellis Cabernet develops brick red-brown colour and classical, elegant cigar-box, tobacco, coffee and mocha smells. With significant bottle age d'Arenberg's High Trellis is invariably supported by aromas of violets, truffles, cooked beetroot, toffee and stewed rhubarb. These characters continue onto the palate where serious cashewy, black olive, liquorice and earthy chocolate flavours can be found after time. The wine's new oak overlay evident when younger, evolves into a consistent, evenly weighted rolling, cedary coffee-bean, mocha soft dusty length followed by an invariably vibrant fresh acid - tannin finish

winemaker's notes:
Four decades of young d'Arenberg Shiraz have been very consistent in color, a deep red-purple, then the immediate hallmarks of spicy, lifted ripe peppery mulberry and blackberry fruit aromas. Richer chocolate, stewed plum mint and spicy, cedary pepper smells and often cinnamon follow the initial attack of primary fruit characters.

The Footbolt Shiraz palate is consistently well structured as a young wine, with terrific fruit and oak tannin providing great texture to support plum, blackcurrant and rolling blackberry flavors especially on the mid-palate. Often dark chocolate characters are quite evident too. This is followed by a traditional, long, velvety, fine-grained tannin finish.

On the tongue, The Footbolt Shiraz maintains a wonderfully textured palate with significant bottle age. Gentle, grainy black olive flavors balance the sweeter coffee, chocolate and occasional mint characters. Malty, earthy and distinctly savory characters on the rich middle palate dominate against soft tannin and piquant acidity.

One swill releases strong aromas of cut grass, celery and leather layered over blackcurrant. Yet the earthiness ends there - it is dry, light and spicy on the palette, well-structured with a delicious smoky berry finish. The panel's favourite. 8/10 2003 TELEGRAPH

winemaker's notes:
In its youth, d'Arry's Original displays a bright magenta like brick red color. The nose attacks with lifted spicy cinnamon plum, mulberry & prune aromas. Typically cherry, wild strawberry & lolly-like musk smells, as well as tighter liquorice, spice, rosemary & fennel.
Hints of coffee & caramel on the nose are quite evident on the palate; a backdrop for cherry-raspberry & richer mulberry-blackberry primary fruit. The palate is typically d'Arenberg and McLaren Vale, soft and rich in the middle, rolling on to a soft but slightly piquant acid/tannin finish.
Well cellared, d'Arry's Original becomes, soft, generous, full flavored, velvety long and seamless in bottle, with no particular component standing out, as more than four decades of previous vintages have shown

winemaker's notes:
After a few years in bottle dArrys Original starts to show some extraordinary tertiary characters, without losing much of its young medium to full bodied intensity. The colour becomes more brick red, then cedar like and finally tawny brown. The bouquet develops a whole range of subtle and not so subtle nuances.

Coffee, mocha, chocolate and leather emerge as dominant older fruit aromas flavours alongside gamey, earthy, cedar like and minty smells. The classic hallmark of peppery-spicy character develops and the velvety texture remains. Occasionally, dried sour cherry aromas and ever so slightly bitter blackberry tannin on the palate develop increasing the wines food applicability. Well cellared, dArrys Original becomes, soft, generous, full flavoured, velvety long and seamless in bottle, with no particular component standing out, as more than four decades of previous vintages have shown.
